There's ballistic-ng which is an open source game inspired by psx wipeouts but i have never played it. Other than that, I only played the f-zero (SNES) and GX, and all the wipeouts up until 64. I can't pick a favorite but Wipeout definitely wins for the soundtrack, holy shit they did not joke around with that

There's Megarace 3, but I don't think anyone liked it.  I dunno why Cryo didn't stick with the original formula for the Megarace sequels, they actually had something pretty unique with the first game.

ballisticng is probably my favorite racing game of all time, really good aesthetic and gameplay plus a shitload of custom tracks+ships on steam workshop.
