Disgaea was a good game. I will check out the other games on the franchise later. I hope they all have playable maids.

There really should be a whole genre of games where the objective is to collect and train as many cute girls as you can, then use them to steamroll through the main story. Bonus points if you can give them guns.

Try The Guided Fate Paradox. It's technically a disgaea game and has cute girls drawn by Noizi Ito (also you can give them shotguns)

I want to play the Disgæa games, but there's something I'm unsure about. Since these games are known for their extensive grinding and huge level caps, will I be "missing" something if I just beat the main story and move on with the game without doing any crazy grinding, or not?

You won't beat the main story without doing any crazy grinding, the same way you're not going to beat a beat-em-up without beating 'em up, or a shooter without shooting. If you want isometric strategy without the grind, there's Fire Emblem, FFTactics, XCOM and lots of standalones (Phantom Brave, Joan of Arc, Wild Arms XF, Tactics Ogre etc), but Disgaea is grind at it's core.
Honestly, they're best played as handheld titles. Emulate them on something portable and just chew on them quick whenever you've got time / a break between other things (weird to think that concept's a relic of a bygone era these days). Binging will burn you out fast and hard once you start hitting walls, but chewing slowly (grind during the week, progress at the weekend) will keep the temperature just right.

I see, I don't mind that, I just had the misconception that most of the grinding is optional post-game stuff. And I did intend to likely play it portably though I hope I won't get weird looks from strangers.

Privacy screen protectors exist if you care that much bro, but it's mostly just cutscene only if that.
Just do some optional side stuff from time to time and your level will stay appropriate for the main story.
Said optional stuff being sub stories or an item world run or 2.
Only 1 and 2 suffer somewhat from this. I went through 3's main campaign fine without grinding jack shit.
Also you're playing some nippon echi title, of course you're gonna get weird look from normalfags if you play it outside.

If you're just in it for the story you only need to get around level 80-100 to beat the story chapters and that's just 10% of the level cap. The insane grind is completely optional. Item worlding is just the most mundane and 'straightforward' way to make your characters OP but later entries de-emphasize it. From D2 onwards with the 'cheat' shop(not really cheating at all, but necesarry, it's essentially sliders for what you want from defeating enemies) the grind gets a QOL boost. 

IMHO the series peaked at 5 and went downhill since.

I played the first one some years back. Got all the way to the final boss, but I couldn't button mash fast enough to win the fight, so I gave up.
