I'd say Ichigo is the best example of that but I'm not even sure which of his 'only shown once' forms was even the greatest. Probably Vasto Lorde.

What enemy did Maka need to defeat that black blood would have helped with? Maybe the chainsaw guy I guess. But the main baddies after that fight that Maka and Soul fought (Arachne and Chroners final form) had to be defeated in other ways.
